steamed sea bream with crushed new pots and tangy tomato salsa

Ingredients:

  • 1 punnet of cherry tomatoes, quartered

  • 1 lemon, zest and juice

  • 1 red chilli, finely chopped

  • 2 shallots, finely chopped

  • 2 tbsp. of balsamic vinegar

  • 1 tbsp. of olive oil

  • 300g new potatoes

  • 50g butter

  • 10 sprigs of parsley, chopped

  • 1 pack of Fred's sea bream fillets


How to:

  1. Add your tomatoes, lemon juice, red chilli, shallots, balsamic vinegar and olive oil into a bowl and allow to sit for as long as possible, 2 hours + ideally!

  2. Cook your new potatoes in water until they are soft, drain and place in a bowl. Add the parsley and butter to the potatoes and mash with a fork. We aren't making mash, some lumps are perfect!

  3. Steam your sea bream fillets for 5-6 mins, until it's fully cooked.

  4. Place your crushed new potatoes on a plate and carefully place the sea bream on top. Drizzle your salsa around the plate. Perfect!


Fred's top tip:

This is my go to, ultra-healthy meal, however, if I'm feeling a little naughty I add a good handful of Parmesan when crushing the potatoes, for that extra creamy flavour!
