Ingredients:
1 red pepper, sliced
1 aubergine, chunky chopped
1 courgette, chunky chopped
1 beetroot, chunky chopped
1 red onion, chunky chopped
5 new potatoes, halved
Olive oil
1 pack of Fred's sea bass fillets
Handful of basil, ripped
Black olives, crushed with your fingers
How to:
Place all your veggies and potato on a roasting tray and drizzle with olive oil and season with salt. Bung in a hot oven, 180c, for around 25 mins.
Pan fry your sea bass for 5 minutes until cooked through, follow the instructions on the back of the pack if you need help!
To finish place all the roasted veg on a plate and garnish with ripped up basil. Add your olives here too. Place your sea bass on top and give the dish a good drizzle of olive oil.
Fred's top tip:
If too many veggies aren't your thing, get rid of some and replace it with some delicious sweet potato! Still healthy and delicious.
